Pastirma/Basturma: is an air-dried meat (beef) that is found in the cuisines of Turkey, Armenia, Azerbaijan, Bulgaria, Egypt, Greece, Iraq and North Macedonia. It is covered with a spice paste that gives the meat an amazing flavor if you haven’t tried Pastirma before you seriously need to try it. It has some similarities to beef jerky or South African biltong but not as dry. You can add the Pastirma to many dishes and in different recipes or just enjoy it raw on a charcuterie board with some cheese, crackers and fruits.
